Chlorophyll

Description

 

Chlorophyll is an oil-soluble green pigment found in plants, algae, and cyanobacteria. For food color, it is extracted principally from alfalfa.

 

Chlorophylls and chlorophyllins are used to impart green shades to a wide range of food applications. Chlorophyll colors have been specially formulated to be heat, light and pH stable for a variety of applications.
