What Does 65:1 Fruit Equivalence for ElderMune® Mean?

ElderMune® is a complex powder consisting of elderberry juice concentrate (EJC), Sunfiber® partially hydrolyzed guar fiber, and ≤1% silicon dioxide. It is produced by co-drying the elderberry juice concentrate and Sunfiber using a low-temperature infra-red drying process, to minimize the damage to the sensitive anthocyanins and polyphenols. The 65:1 refers to the fruit to concentrate ratio for the elderberry juice concentrate (EJC) – let’s first focus on the juice concentrate part of ElderMune®.

ElderMune® contains the Haschberg variety of Sambucus nigra, the European black, or common, elderberry. These elderberries are grown in the temperate climates of Ukraine, Poland, Hungary and Austria. After harvest, the berries are de-stemmed to remove stems and leaves. These parts of the elderberry plant are toxic and therefore not edible. The berries are mashed to break up the skins and allow the anthocyanins and polyphenols to migrate to the juice portion.

At this stage, the elderberry juice is relatively dilute. To produce a 65:1 concentrate, the elderberry juice must be further concentrated in a temperature-controlled vacuum evaporator. Through this process, a concentration of elderberry juice is reached where an equivalent of 65 pounds of elderberries would yield 1 pound of elderberry juice concentrate (EJC).
